Meals

This is the first week I tested out meal planning and I have to say I think I like it. Sunday I took a look in the freezer to see what types of meat I had and from there decided on the recipes I wanted to try out this week. I made a list of all the ingredients I would need and didn't have in the house then off to the store we went.

Being a full time working mom having all of my meals decided ahead of time and meat defrosted helped tremendously. I didn't have to come home with no plan for dinner or make any last minute runs to the store. I'm thinking I will start doing this more often.

The meals I planned for this week were:

Monday - Spaghetti
Tuesday - Milano Chicken
Wednesday - Oven Fried Pork Chops
Thursday - Shrimp Fettucini
Friday - Left Overs

I pretty much stuck to this menu except Monday Ry begged for Hamburger Helper so I made that. There have not been many left overs so Friday may end up being Spaghetti.

I'm not ready to start planning meals for the weekend yet cause we like to go and visit family or Bar B Que on the weekends.

Tonight we actually ate at a decent time, finished early, cleaned the kitchen, everyone showered / bathed and still had time to sit down and watch a show together. Now, THIS I can get use to.

**By Request the Recipe for Milano Chicken**

1 Pack Bnls Sknls Chicken Breast
Roll each brst in flour, dip in beaten eggs, then roll til well coated in italian bread crumbs.
Pan Fry in butter til brown on both sides.
Mix 1 cup marina sauce (I use spaghetti sauce) & 1 cup half & half pour into casserole dish.
In another bowl mix 1/2 cup mozzarella, 1/2 cup swiss cheese, and 1/4 cup grated parmesan cheese.
Arrange chicken from above in casserole dish and pour cheese mixture over the top.
Loosely cover and bake in 350 degree oven for about 30 minutes.
